Today on Make It Healthy Monday, are almond flour pancakes with berries and bananas.
Deprivation is not allowed in Health Mastery, so we work on making our ‘favorites’ healthy.

Stephen made these for me on Saturday and I loved them. They were a bit too moist for him, which is good for me since he’ll keep trying to perfect:)
Almond Flour Pancakes with Berries and Banana
- 2 Cups Almond Flour (Trader Joes has a good one)
- 3 Eggs
- 1 teaspoon baking powder
- 3/4 – 1 Cup liquid (water, almond milk, coconut milk, etc…)
- berries and / or banana slices
Mix the first three ingredients and then add the liquid slowly until you get to a thin, pourable consistency. Use 1/4 cup of batter for each pancake. After flipping the first time add a few berries and / or banana slices. Top with a little more batter and then flip one more time.
These do not need syrup, but if you must then drizzle a bit of honey on top. Yum!
